the weekend.... and falling off of the wagon

Cupcakes are the devils food. Sweet Sweet Devils Food.


I made two dozen of them for my sister-to-be's birthday party. One batch was a delectable lemon drop cupcake with a thick lemon butter cream, the other was a strawberry tall-cake with vanilla butter cream.
I held back from eating them all and only had one cupcake, which was quite the challenge....however I am still not proud of myself.

I have to admit that I fell off of the wagon with something I barely ever have...

BEER. (okay and some whiskey)

Shit! I had like 7 beers, two whiskey sours and played like 27 games of flip cup. I went way over my calories, myfitnesspal.com estimates 1722 calories (goal is 1200) and guess how much of it was booze?

992 CALORIES in booze!

YIKES!



I could have had NINE cupcakes and it would have been less calories.

I felt pretty bad about this on Sunday so I walked about 5 miles the next morning  I've learned a hard lesson this weekend, I can't drink my calories. And beer gives me a nasty hangover.

Also regarding my last post, I couldn't fully walk again until Sunday (or bend my arms) ...so my advice is to ease into your exercise and not jump into the hardest class at the gym.

It never gets easier, you just get better.

I feel like I fell down 8 flights of stairs and hit every muscle grouping on the way down. Ouch.

Yesterday was my first day back at the gym in over 6 months and my body is definitely making up for lost time. I decided to go to Bodycombat at Goodlife which is a resistance and weight training class. On a scale from 1-10 on challenge, I would rate this class an 11. I left the class completely unable to walk down the stairs to the subway without the assistance of a railing.  I was also trembling whenever I bent my knees or arms.
I'm pretty sure that in the world of fitness that constitutes a good workout. Masochists.



Last night i got in pretty late (9:30pm) so I didn't want to eat anything with too much fat or carbs in it. I opted for a salad, grilled red peppers and mushrooms with a few baked sweet potato "fries". My protein was a low-fat sol veggie burger sans bun. When I went to the grocery store to grab my salad, I was shocked to learn that an average hamburger bun has 300 calories. That's half of my entire meal in a bun! The condiments in this meal are low fat Catalina dressing on my salad, ketchup(i had to), a tiny bit of dijon mustard instead of vegan mayo on my burger and I put about a teaspoon of daiya cheddar on top of the veg burger.

This dinner was about 411 calories. And has 22g of protein.



I am proud of myself because I am feeling that i'm finally getting some control over my eating. Manny (my finacee) maid an oriental stirfy last night with one cup having about 1200mg of sodium and 800 calories. As tempting as it was, I realized that it just wasn't worth it.

Tonight is recovery night, tomorrow is Bodycombat at Goodlife and on Sunday I'll be doing yoga at Lululemon. Yoga is my absolute favorite workout.



As much pain as I'm currently in, I really believe wholeheartedly that I can do this.

Saffron Vegan Morrocan Stew - This week's lunch.

Since Monday I've been eating the same lunch. I made a huge batch of Moroccan Vegan Stew on Sunday night and I found that it keeps very well in a sealed container in the fridge. It's day four now, I think it's this stews last day. The flavour got much better throughout the week! This stew would also freeze well.






I find that Quinoa bloats me in a big way....so my advice is to soak your Quinoa overnight as it enhances digestibility and neutralizes phytic acid. I used organic red quinoa in my recipe. Those little white threads indicate that i've cooked my quinoa properly....I had to get a second opinion on that one from my colleague :)

 This is the perfect lunch because it has heaps of protein and keeps you pretty full. Personally I don't get dinner until fairly late due to my work/gym schedule so this tides me over until then. I found I needed a small snack in between (opted for goji berry trail mix). 


 


In my stew I used Yams because they are better for you than sweet potatoes and subbed in ground saffron instead of saffron threads. Saffron threads are extremely expensive! I also swapped maple syrup instead of brown sugar because I'm trying to cut down on my refined sugar intake.



Here is the original RECIPE:

Saffron-Spiked Moroccan Stew
From Colleen Patrick-Goudreau's The Vegan Table

1 1/2 cups plus 3 tablespoon vegetable stock, divided (you can use water, and more stock if you want a soupier stew)
1 large yellow onion, chopped
2 large red bell peppers, seeded and chopped
3 garlic cloves, minced
2 teaspoons brown sugar
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/4 teaspoon ground cayenne
1 teaspoon grated or minded fresh ginger
1/2 teaspoon saffron threads
2 sweet potatoes cut nto 1/2" cubes
1 15 ounce can diced tomatoes (don't drain them)
1 15 ounce can chickpeas, drained and rinsed
Salt and pepper to taste

Heat 3 tablespoons of the stock in a soup pot over medium heat. Add the onion, peppers and garlic and sweat the vegetables until the onions are translucent. This should take between 5-7 minutes. You can add more liquid if it starts to evaporate too much.

Add the brown sugar, coriander, cinnamon, cumin, cayenne, ginger and saffron, and stir to coat well. Cook for 1 minute, then add the sweet potatoes and continue stirring. Stir in the tomatoes with their juices, the remaining stock and the chickpeas. Make sure the potatoes are submerged in the liquid so they'll cook. I found that this amount of liquid didn't quite cover everything, but I also didn't want my stew to be overly runny so it would be more transportable.

Bring the liquid to a boil, then reduce the heat to low. Simmer until the sweet potatoes are cooked, but not overly. This will take about 30 minutes. Season with salt and pepper to your taste, and serve over quinoa or couscous.

I wanted to open this blog with my love affairs....

My first love has always been food. I've been the "chubby" girl almost all of my life. I remember being 14 and 155 pounds. I never would have called myself fat, lucky for me I got my mom's genes so fat balances well throughout my body. It's hard to notice the difference between 05 pounds and 20.

My second love I met later on in life, and that is my fiancee Manuel Orellana. We met during a training program for our current employer, Flight Centre. The feelings I have for Manny are similar in some ways to my feelings for food,  unconditional love and overwhelming good feelings.





I have also been vegan for about 6 years and my love for "diner food" has become my unhealthy obsession. Think I can't make fried chicken and waffles vegan? Think again! I live for making greasy diner food vegan for my sweetheart. My goal was making it taste just as greasy and delicious as their non-vegan counterparts.

And then it happened. Manny purposed to me on a sunny day in June at an amazing mountain resort called Jade Mountain in St Lucia. I am the happiest (and fattest) I have ever been.





Last week I found my dream wedding dress, it was quadruple my budget. The trumpet style, low back, sweetheart neckline, lace and beaded Allure C153 gown. Stunningly beautiful....I was on a mission to find something similar online for a more reasonable price.

One afternoon I stumbled upon http://www.preownedweddingdresses.com and found a replica of my dream dress for $350, in a size 8. (I used to be a size 6...and nowhere in my mind did I become a size 12). The measurements of the dress were pretty close to what I thought mine were...

Then I measured myself. After ordering the dress. The truth is, I gained 20 pounds without even realizing it.. My new measurements are roughly 31 Waist, 38 bust, 41 hips. Just two years ago my measurements were 27 waist, 35 bust, 38 hips. What had happened to me? I went from a size 6-8 to a size 12.

My dress arrived in the mail yesterday and not to my surprise I can't even come close to zippering it.

So here is my journey to lose 4 inches in 6 months and a total of 25 pounds in one year. I plan to do this with lots of good whole vegan foods and exercise.
